Chicken Tikka Masala!

Prep:
Preheat oven to 350 degrees F. Grease and flour two loaf pans.
Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, allspice, and salt until combined. Set aside.
In a large bowl, beat pumpkin, bananas, yogurt, oil, eggs, sugar, and brown sugar until smooth. Add the flour mixture, half at a time, and beat on medium until combined. Fold in walnuts.
Divide batter between the two prepared loaf pans. Bake for 45 minutes.
Let pumpkin banana bread loaves cool for 15 minutes in the pan on a rack or trivet, then remove from the pans and let cool completely to room temperature before slicing to serve.
Yield: 2 loaves

Seitan Yummy Saute
(Serves 4)
Enjoy this delicious meatless vegan dish.
1-1/2 teaspoons oil
1 medium onion, chopped
2 cloves garlic, minced
1 Tablespoon garam masala
8 ounces seitan, finely chopped or coarsely grated
2 cups shredded zucchini
1 cup chopped fresh tomatoes
1/2 can crushed pineapple in juice, undrained (20 ounce can)
2 Tablespoons peanut butter
1/2 cup lite coconut milk
Salt and pepper to taste
1/4 cup chopped fresh cilantro
Dash of Hot Sauce (optional)
Chopped peanuts for garnish (optional)
Heat the oil in a large skillet. Add the onion and sauté for 5 minutes. Add the garlic and garam masala. Stirring, cook for another 1 to 2 minutes. Add the zucchini, seitan, and tomato and cook for 1 to 2 minutes. Add the remaining ingredients, except cilantro and simmer over medium heat for 10 minutes until sauce begins to thicken slightly. Taste and add Hot Sauce, if desired. Stir in cilantro. Top with chopped peanuts. Serve hot over rice.
We were trying to be a real family again---it was 1991--and my life had returned to "almost normal" after having had to cross the globe to enact some special help..and there I was, in Jamaica--again--with my own children and their Dad.
We were staying in a villa in 'Bay and one night, when I was sitting down to eat my late dinner, I felt a presence standing right behind me. Remaining calm, I chose to ignore "him" and kept eating. That is when "it" stuck its bony finger right into my spine!
That was it! I jumped up and ran out of the house! But had to return as my children were inside, sleeping.
Needless to say, we kept the lights on all night!
Jamaica is literally teeming wiht ghosts and the supernatural. It is where I saw my first ghost and most importantly, where I first discovered I had a way of deflecting them away; a talent that has only grown with time.
